Healthier Pancakes

Pancakes don't have to be unhealthy. You can add a lot more nutrients to your day with this recipe.


Ingredients


  • 1/2 cup rolled oats

  • 1/4 cup chia seeds

  • 3 eggs

  • 1 banana

  • blueberries (fresh or frozen)

  • coconut oil (for cooking)

Toppings of choice

  • natural yoghurt

  • fresh or defrosted frozen berries

  • other fruit of choice

  • maple syrup (good proper one - not fake sugary one)



Directions

  1. Blitz the oats and chia seeds in blender.

  2. Add eggs and banana and mix until all blended.

  3. Heat up fry pan and add a little coconut oil

  4. Pour enough batter to make a pancake about the size of your palm. Add some blueberries at this point. I love blueberries so am very generous with how many I add.

  5. Flip pancakes once you see the batter bubbling and will be less runny

  6. Keep going until all pancakes made (about 4). You may need to add a bit more coconut oil as you go.

  7. Serve with desired toppings

  8. Enjoy!
